One of my all time favourite cookies, and a family favourite too!

Two sugar cookies with raspberry jam in the middle drizzled with icing. Usually there’s a piece of candied cherry on top, but I didn’t have any.
I don’t have a rolling pin either, but I covered the jam jar in plastic wrap and it worked great!
